Power for me personally, translates to the ability to challenge preconceptions surrounding Mexican culture through food. Mexican cuisine, often misunderstood by fast-food establishments, stands as one of the world’s most extraordinary culinary experiences, acknowledged globally as a cultural heritage. It encapsulates a holistic cultural model, encompassing agriculture, ritual practices, ancient skills, culinary techniques, and ancestral community traditions.

What I have been trying is to showcase my culture at our restaurant and through public events. While the effort may be modest, I strive to represent Mexico to the best of my ability, utilising the available resources at hand.
